When I lived in England in 2015 I found that they had gone a bit beetroot crazy and a beetroot salad was to be found on every damn menu in town. Whether it was a pub, cafe or restaurant, verywhere I turned I saw this salad on a menu. Of course, me being me,it meant that I had to go home and make it myself – afteral, how hard can it be right?
So here we go, a super simple salad perfect for entertaining, or lunch for yourself!
What Will I Need?
200g fresh beetroot (approximately 3) peeled and grated.
2 medium carrots, peeled and grated
100g baby spinach
50g goats cheese
1 tbsp extra virgin olive oil
- In a large bowl toss the beetroot, carrot, spinach, and oil together. Season with salt and pepper.
- Transfer to a serving bowl and sprinkle with crumbled goats cheese.
