How to Make Crunchy Oven-Baked Sweet Potato Fries

Every few weeks Ben and I have a movie day, where we pull out the sofa bed, throw on some movies (typically Sci-Fi or Comic Book related), and eat delicious finger food I either prepared the night before, or that morning, or as the movies are actually playing. Typically, no matter what else we’re eating, sweet potato fries always feature on the menu. In fact, they feature in most menus whenever you’d normally have potato chips or wedges. You might say I’m a bit of a fan.

See, I don’t really like potato. Potato to me is just a vessel for gravy (or butter). The only time I actually enjoy potato is ready-salted crinkly cut crisps, but otherwise, potatoes and I just don’t see eye to eye (pun not intended, but welcome none the less).

Yet, as always, I digress: If you haven’t tried sweet potato fries – what are you doing with your life?! I literally keep a large container of homemade fries in my freezer, ready for whenever the mood takes me to throw them in the oven.

Making sweet potato fries isn’t as simple as boring ol’ potato fries, which is why I prepare them in bulk and freeze them, but they’re definitely worth that little bit of extra hassle. Sweet potato fries have to be soak before hand to ensure they’re nice and crunchy, and you never want to overcrowd the oven or they release too much steam and then you get soggy fries, and I wouldn’t wish soggy fries on my enemies!


There’s not really a recipe for these, hence why it’s a “How To” so let’s get on with it!

What Will I Need?

Sweet Potatoes, peeled and cut into fries
Corn flour
Spices (cumin, paprika, or whatever takes your fancy)
Spray Oil
Large bowl
Kitchen towel
Baking paper

What Now?

  1. Soak the sweet potato fries in a large bowl of cold water for at least one hour – Do not skip this step!!
  2. Drain the sweet potato and pat dry with kitchen towel.
  3. Tranfer to a dry bowl and add a very small amount of corn flour, and toss through – the sweet potato should have a very light coating of flour. Tap off any excess.
  4. Line a baking tray with baking paper and spray lightly with oil
  5. Create a layer of sweet potato, ensuring that the fries are not touching.
  6. Spray the fries with a light coat of oil, and sprinkle over a small amount of your choice of spices.
  7. Bake for 15 minutes on 220C, before flipping over the fries and baking an additional 15-20 minutes.
  8. Sprinkle with a pinch of salt and allow to cool 10 minutes before removing from tray and serving.
