Although it’s winter, and although comfort food is all I have been banging on about, on Saturday night Ben and I decided to go a little Tex Mex to accompany a lazy TV night in.
See, the weekend was a bit of a do-nothing-time as I finished up a contract on Friday and needed some R&R, so rather than go on any adventures or do anything in particular, we decided to stay in, eat in, and sleep in, as a way to help me come down from the stress-rollercoaster I have been on.
Stress, stress, stress!
Thank goodness one of my goals for this year is to reduce my stress!
Anyway, back to the food: there are countless buffalo wings recipes out there and I wanted to make mine super-simple, but still incredibly delicious. Also, these are oven baked purely because it reduces the calorie content (which let’s be honest, we all need after Christmas!) and it’s also easier to bake than to fry.
Also, as a special treat – I’ve included my ranch dipping sauce recipe! This will also be a solo recipe further down the track, but that will be how to make the spice mix to keep in storage, rather than the version below which includes the mayo and sour cream.
Ok, recipe time!
What Will I Need?
1kg chicken wings, jointed
1/4 cup olive oil
1/2 cup plain flour
1 tsp paprika
1 tsp onion salt
1 tsp garlic salt
1/4 cup mayonnaise
1/2 cup sour cream
1/2 tsp onion salt
1/2 tsp garlic salt
1 tsp dried parsley
1 tsp dried chives
- Buffalo Wings
- Preheat oven to 200C and place wire rack on top of a baking tray.
- Toss together the wings, oil, flour and spices until the wings are evenly covered.
- Evenly spread the wings over the wire rack and then bake in preheated oven for 45 minutes, turning after 20 minutes.
The Ranch Dressing
- Combine sour cream, mayonnaise and spices in a bowl and mix until well combined.
- Season with pepper.
